Pizza Grilled Cheese Sandwiches

Ingredients:
- 4 slices of bread (Italian or sourdough works well)
- 2 tablespoons unsalted butter, softened
- 4 slices of mozzarella cheese
- 4 tablespoons pizza sauce (store-bought or homemade)
- 6–8 pepperoni slices (optional)
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- Pinch of red pepper flakes (optional)
Instructions:
- Spread 1 tablespoon of softened butter on one side of each bread slice.
- Place two bread slices, buttered side down, on a cutting board or plate.
- Evenly spread 2 tablespoons of pizza sauce on each un-buttered side.
- Top each sauce-coated slice with 2 slices of mozzarella cheese.
- If using, layer 3–4 pepperoni slices over the cheese on each sandwich.
- Sprinkle each with a pinch of dried oregano, garlic powder, and red pepper flakes.
- Close the sandwiches with the remaining bread slices, buttered side up.
- Heat a skillet or nonstick pan over medium heat.
- Once hot, add the sandwiches. Cook until the bottom is golden and crispy, about 3–4 minutes.
- Carefully flip and cook the other side for another 3–4 minutes, until cheese is melted and bread is golden.
- Remove from pan, let rest 1 minute, then slice each sandwich diagonally.
Variations & Tips:
- Swap pepperoni for cooked sausage, diced veggies, or prosciutto.
- Use provolone or a blend of Italian cheeses for extra melty stretch.
- Brush a thin layer of garlic-herb butter on the crust for extra flavor.
- Serve with extra pizza sauce or marinara for dipping.
Storage:
Wrap leftovers in foil and refrigerate up to 2 days. Reheat in a skillet or oven for best texture.
