Ingredients

  • 4 boneless, skinless chicken breasts (about 6–8 oz each)
  • ½ cup mayonnaise (plain or light)
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika (or sweet paprika)
  • ½ teaspoon dried oregano or Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  2. Pat the chicken breasts dry with paper towels. Season both sides lightly with salt and pepper.
  3. In a medium bowl, combine mayonnaise, grated Parmesan, garlic powder, paprika, oregano, and a pinch of salt and pepper. Stir until smooth.
  4. Place the chicken breasts in the prepared baking dish. Drizzle each breast with a little olive oil and rub to coat evenly.
  5. Using a spatula or spoon, spread the mayo-Parmesan mixture evenly over the top of each chicken breast, creating a thick crust.
  6. Bake in the preheated oven for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the topping is set.
  7. Optional: Switch the oven to broil on high and broil for 2–3 minutes, watching carefully, until the cheese topping is golden brown and bubbly.
  8. Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped fresh parsley, if desired.

Serving Suggestions

  • Serve over a bed of steamed vegetables or mixed greens.
  • Pair with roasted potatoes, rice pilaf, or garlic bread.
  • A squeeze of lemon juice over the top brightens the flavors.

Tip: For extra crunch, stir 2 tablespoons of panko breadcrumbs into the mayo-Parmesan topping before spreading over the chicken.
