Ingredients:
3 eggs (at room temperature, like the abuela)
1 cup of azúcar
1 cup of milk entera
1/2 cup of oil (as used at home)
2 cups of trigo harina (cernida, siempre cernida)
1 spoon of hornear powder
1 chorito of vanilla essence
Una salsa pizza (like lo hacía la abuela: con los dedos)
Optional: ralladura de limón o naranja, o un toque de canela si quieres darle ese “no sé qué” que sabe a hogar.
Preparation:
Preheat the oven to 180°C (350°F). Grease and flour a round or rectangular baking pan.
In a blender, combine the eggs, sugar, milk, oil, and vanilla. Blend for about 2 minutes until smooth and creamy.
Add the sifted flour, baking powder, and salt. Blend in short bursts to prevent overheating the motor. We don’t want a sticky batter!
If you’d like to add zest or cinnamon, now’s the time. Gently fold it in by hand with a spatula.
Pour the batter into the prepared pan and tap it gently to settle any air bubbles.
Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
Let it cool for about 10 minutes before unmolding, and if you want Grandma’s finishing touch: sprinkle it with powdered sugar or serve it with a cup of hot chocolate.

“Don’t cut the cake in half before it’s ready. Don’t be curious, or it will collapse. Leave it alone until it’s done!”
