Ingredients:
1 egg
1/4 cup (60g) granulated sugar
1 tsp vanilla sugar (8g)
Pinch of salt
1/2 cup (125g) yogurt
1/4 cup (60ml) oil
1 cup (140g) all-purpose flour
1 1/2 tsp baking powder (7g)
1 medium apple, peeled and chopped
1 tbsp brown sugar
2 tbsp apricot jam (for topping)
2 tbsp shredded coconut (optional)
Directions:
Preheat oven to 350°F (180°C).
In a large bowl, whisk together the egg, sugar, vanilla sugar, and salt until smooth.
Add yogurt and oil, and mix well.
Sift in flour and baking powder, and fold into the batter.
Gently fold in the chopped apple.
Pour the batter into a greased cake pan and sprinkle brown sugar on top.
Bake for 15-20 minutes, or until golden and a toothpick inserted comes out clean.
Once cooled, spread apricot jam over the top and sprinkle with shredded coconut, if using.
Serve and enjoy!
