Cheesy Pizza Tortilla
Ingredients
- 2 large flour tortillas
- 4 tbsp pizza sauce
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 6–8 slices pepperoni (optional)
- 1 tbsp olive oil or melted butter
- Pinch dried oregano or Italian seasoning
- Fresh basil leaves, for garnish (optional)
Equipment
- Nonstick skillet or frying pan
- Spatula
Instructions
- Prep the tortillas: Lay both tortillas flat on a clean surface. Brush one side of each tortilla lightly with olive oil or melted butter. This will help them crisp up.
- Assemble the first tortilla: Flip one tortilla so the oiled side faces down. Spread 2 tbsp pizza sauce evenly over the top. Sprinkle half the mozzarella and half the cheddar over the sauce. Arrange pepperoni slices if using. Finish with a light sprinkle of dried oregano.
- Top and seal: Place the second tortilla on top, oiled side up, pressing gently around the edges to seal.
- Cook on the stove: Heat your skillet over medium heat. Carefully transfer the assembled tortilla to the pan. Cook for 2–3 minutes, until the bottom is golden brown and crispy.
- Flip and finish: Using a spatula, flip the tortilla. Cook another 2–3 minutes until the second side is golden and the cheese is fully melted.
- Slice and serve: Transfer to a cutting board. Let rest 1 minute, then slice into 4 or 6 wedges. Garnish with fresh basil if desired.
